Za’atar: The Spice That Brings Family Back to the Table

Every family has a flavor that instantly brings them home. For mine, that flavor has always been Za’atar. A fragrant, nutty, citrusy spice blend made from wild thyme, roasted sesame seeds, sumac, and a touch of sea salt.

When I was a child, mornings began not with cereal or toast, but with the smell of warm bread spread with olive oil and sprinkled with Za’atar. My mother would call us to the table, and we’d tear pieces of fresh pita, dip them into golden olive oil, and swipe them through the spice blend. It was more than breakfast; it was love served on a plate.

Years later, when I became a father and then a grandfather, Za’atar became the bridge between generations. When my daughters come home, they would always ask for “Za’atar mana’eesh” (flatbread topped with olive oil and Za’atar).  Now as my granddaughter takes her first bites of the same flavors, I realize that taste has tied my childhood to theirs.

3 Delicious Ways to Use Za’atar

  • 🍞 Dip ItThe Classic Dip
    Mix 2 tablespoons of Za’atar with 2 tablespoons of olive oil. Tear warm bread, dip, and enjoy. Simple. Perfect.
  • 🍗 Roast ItZa’atar-Roasted Chicken
    Rub chicken thighs with olive oil, lemon juice, and 3 tablespoons of Za’atar. Roast at 400°F until golden brown. The result? Crispy skin, juicy meat, and flavors that taste like home.
  • 🥕 Sprinkle It Za’atar-Roasted Vegetables
    Toss cauliflower, carrots, or potatoes with olive oil and Za’atar. Roast until caramelized. Even the kids will ask for seconds.

 

 

Family Recipe: Za’atar Mana’eesh (Flatbread)

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1 tsp yeast
  • ¾ cup warm water
  • 4 tbsp Smoky Za’atar Heat
  • 4 tbsp olive oil

Instructions:

  1. In a bowl, mix flour, yeast, sugar, salt, and water. Knead until dough is soft. Let it rise 1 hour.
  2. Divide into 4 balls, roll each into a flat circle.
  3. Mix Za’atar with olive oil, spread over each round.
  4. Bake at 450°F for 8–10 minutes until golden.
  5. Serve warm, gather family around, and watch smiles appear.
